Zucchini Soup

2 large zucchini sliced
1 onion cut up
4 cups of chicken or vegetable broth
1/2 cup canned milk Salt & Pepper Fresh Nutmeg (ground is okay) Corn starch Shredded Cheese
  • Steam or boil vegetables until tender. If you boil, cook in broth. Puree cooked vegetables in a blender or food processor.
  • Add to broth.
  • Add canned milk
  • Add Salt & Pepper, Fresh Nutmeg (ground is okay) to taste Bring to boil.
  • Add corn starch to thicken to desired consistency.
  • When serving, you may wish to add shredded cheese... Serves 4 to 6.
